Kriek is a fruit lambic with cherries. Traditionally, Schaerbeek cherries are used, a type of cherry with very little pulp, similar to wild cherries. When being used for lambic, the cherries are not harvested until they have shrivelled, as this is when their aroma is at its peak. 200 to 300 grams cherries are macerated in one litre of beer and left in the barrel for three to 18 months; during this time the fructose is fully fermented. Kriek has an alcohol content of 4% to 6% and is drunk from balloon glasses at a temperature of 5 to 6 °C. Kriek is particularly delicious to drink in summer.
