Geuze is a cuvée comprised of lambic beers of different age, most commonly a one year old not fully fermented lambic blended with a two to three year old lambic.. Bottled and corked, the residual sugar of the young lambic triggers a secondary fermentation which results in natural carbonisation of the beer.
A geuze is a dry beer with crisp acidity and a complex range of aromas. An Oude Geuze is a beer brewed without the addition of sugar and is neither filtered, pasteurised nor artificially carbonated.
Industrial beers normally resort to these processes in their production. The blending of lambic beers for the purpose of producing a geuze is made by the “geuzesteeker”, a blender who uses his own individual procedure to create his beer.
