Felix and Susa are the persons behind Orca Brau – Felix prominently in the foreground, the face of Orca Brau, so to speak, but the brewery is inconceivable without Susa as its soul. I came across Felix for the first time on 23 November 2013 on the open day of the Berlin Beer Academy, its opening event. My first impression was that of a communicative person really passionate about creative beers; and this impression has been confirmed throughout our acquaintance. Felix was one of the initiators and organisers of the first Berliner Weisse Summit on 17 February 2014, and this year he will attend the Festival presenting his own beers. The first Berliner Weisse festival in 2014 in the Beer Academy aroused my interest in and passion for wild beers; and Felix gives full rein to this passion in his brewing. For two years now, Felix has been brewing a wide range of different beers on the outskirts of Nuremberg. Craft, creativity and passion are the drivers for Felix and Susa to promote the diversity of beers – a matter truly dear to their heart.
Here are the beers which Felix and Susa will present at this year’s Berliner Weisse Summit:
Well, we will definitely bring our “RAW”, 3 %, a Berliner Weisse, not boiled, with Brettanomyces, barley, wheat and oat malt. “RAW” will always be part of our range, basically, we will repeatedly brew a new batch with our mixed fermentation strains (beer yeast, Lactobacillus, Brettanomyces). We intend to have two tanks of this brew. As for finishing, we want to take off small quantities of beer and to flavour them with different herbs, fruit, spices, etc. This basic beer will also serve for blending.
In addition, we produce a saison which was fermented in a red wine barrel with Brettanomyces and red grape juice. We still have to come up with a name for this one.
Here are what consumers thought about “Wildfang 1” on ratebeer:
Purchased more to take home directly after tasting. Is a sour Saison. Pours clear golden colour. Starts with a sour bite, opens up to a full bodied mouth feel, with raisins and honey as it leaves you. Freaking delicious!
Pours a dark gold, light amber coloration with a small, fizzy head. Smell is dominated by tart plums with hints of vanilla and oak. Taste follows the nose, with a very nice tart plum character complemented nicely by light citrus notes and hints of vanilla, oak and herbs. Finishes with a light sweetness and mild acidity in the aftertaste. Medium body and carbonation. A very nice Saison with a medium sourness and lovely plum notes, complemented by a light barrel character. This is quite subtle, yet with a certain complexity.
